Beadon Bay Hotel , owned by The complete group (COMPLETE HIRE AND SALES PTY LTD is looking for an experienced Restaurant Manager to join their team in Beadon Bay Hotel , Onslow WA 6710.
FUNCTION:
Responsible for all aspects of the day to day operation of the restaurant; developing and maintaining a high service standard; and upholding the policies and procedures of the restaurant.
RESPONSIBILITIES:
• Develop in conjunction with the managing director and hotel manager, sales leads for business.
• Manage of the restaurant accounts and daily banking.
• Supervision of all food and beverage team members.
• Develop and assist in developing the hotel menus.
• Maintain superior levels of food and beverage service to guests.
• Ensure that all team members’ product knowledge is at an acceptable level.
• Participate in the planning and conducting of theoretical and on-the-job training.
• Ensure that all areas are stocked to appropriate par levels.
• Supervise the maintenance and cleanliness of the facility on a daily basis.
• Maintain and order the appropriate beverage stock levels, in accordance with the established policies and procedures.
• Anticipate and attend to the guest’s needs and desires immediately to include special events like birthdays, anniversaries, and other special occasions.
• Monitor food quality and quantity, relating to portion control.
• Monitor all wine storage facilities to ensure that proper storage techniques are being used and that the cleanliness standards of storage areas are being well maintained.
• Develop and maintain all wine and beverage menus.
• Managing the cost of all wine and beverage menus.
• Maintain and effectively roster all restaurant team members, keeping within the budgeting of payroll percentage of 29%. Forecasting will be required on a weekly basis.
• Maintain and effectively roster all bar team members, keeping within the budgeting payroll percentages of 25%. Forecasting will be required on a weekly basis.
• Ensure that all wastage items are fully recorded, explained, and kept under 0.9% of revenue.
• Maintain and record all food and beverage transfers to and from the bar.
• Addresses customer's complaints concerning service, food, and beverages while ensuring guests are served in an efficient and courteous manner.
• Supervises and motivates assigned employees including coaching, counselling, evaluating and training activities to maintain or surpass customer service goals.
• Provide leadership that supports a strong competent management team.
• Plan and organise upsell programs and tools to motivate staff for increased revenue.
• Ensure a tool of measurement is in place to determine success factors.
• Ensure all service personnel are aware of and understand the Beadon Bay Hotel’s service levels and requirements.
• Maintain an employee communication board including upcoming events, promotions, daily food/beverage/bottle shop specials and a place for memos generated by management.
• Ensure a clean, safe, and sanitary work area always. All general cleaning should be performed using specified safe cleaning supplies and staff should immediately clean up any spills.
• Inspects establishment and observes workers and patrons to ensure compliance with occupational, health, and safety standards and applicable liquor laws.
• Be knowledgeable of all menu items, their preparation and plate presentations.
• Ensure all Food and Beverage items are rung through the point-of-sale system.
Ensure that all finished orders are served to guests immediately.
Ensure opening and closing duties assigned to line employees are completed and all monies are accounted for.
Be familiar with facilities, services, location and operating hours to assist guests.
• Schedule staff to house occupancy, special functions, local attractions, and other interests that may influence business.
• Cooperates with other department heads to see that the overall commitments of the hotel are fulfilled. Prepares time keeping, payroll and accident reports as required.
• Abides by all state, national and company liquor laws pertaining to serving alcoholic beverages to minors and intoxicated guests and hours of operation.
• Ensure efficient effective management of the bottle shop and its inter-company service functions.
• Alongside the Hotel Manager, develop internal inventory management processes to ensure that stock is available to all business areas from the bottle shop.
• Develop Bottle shop specials alongside the Hotel Manager.
DIVISION: RESTAURANT
REPORTING TO: GENERAL MANAGER AND HOTEL MANAGER
Salary : $70,000 per annum plus Superannuation.
Other benefits : Free Staff Accommodation and 3 x staff meals only per day provided.
