The Restaurant Manager of Butcher’s Block is responsible to support the Restaurant General Manager for supervising the overall operations and service standards of the outlet to meet and exceed guest’s dining experience expectations. Outlet Operations

• Conduct departmental daily briefings to ensure that all pertinent information is well received by team members
• Supervise team members to ensure that all tasks assigned/required in the outlet are carried out on time and according to instruction and departmental standards
• Build a good relationship with guests and remember individual guest’s names and their preferences to extend a personalized service
• Handle guests’ complaints and comments tactfully and efficiently
• Handle all administration work pertaining to cashier/bar operation requirement and company’s policies
• Maintain department communication logbook and updated notice board
• Check the supply of equipment/stock level and ensure that there is no shortage of items which have impact on the operation and guests
• Check the outlet/back of the house cleanliness to ensure that it is in compliant with F&B sanitation and hygiene rules and regulations
• Maintain complete knowledge of all food & beverage services, contents & preparation methods, outlets and hotel services/features
• Ensure that LQA Standards, health, safety and security procedures are in place in the outlet
• Attend all briefings, meetings and trainings as assigned by management
• Perform proper handover and communication to the next shift
• Assist other food & beverage outlets with their operations during peak times or when required

Team Management

• Interview, select and recruit outlet employees
• Identify and develop team members with potential
• Conduct performance review with the team
• Constantly monitor team members’ appearance, attitude and degree of professionalism
• Develop, conduct maintain all staff training programs for team members, focusing on their development needs, providing them with new skills to meet the changing needs of the business
• Prepare weekly staff schedules keeping in mind anticipated business, operating budgets and standards of service
• Prepare payroll and gratuity reports
• Conduct monthly departmental meetings to provide information to team members, obtain their feedback, rectify operation issues and provide a regular forum for department communication

Key Responsibilities:

Food & Beverage Planning

• To plan & execute the operations of the assigned outlet.

People Management

• Ensure that the team has been trained for all safety provisions.
• Motivate and develop the team to ensure smooth functioning of the outlet and promote teamwork.

Financial Management

• Prepare and work on the annual budget for the assigned outlet and ensure to give proper monthly follow up to the Director of Food & Beverage
•  Ensure that profit margins are maintained; agreed costs are not exceeded through effective control systems and menu costing.

Operational Management

• Assist in sales promotion by organizing events and food festivals for the assigned outlet.
• Ensure to maintain high standards of quality control, hygiene, and health and safety in all areas of the assigned outlet.
• Supervise and control the assigned outlet within agreed budgetary limits and parameters of the law.
• Ensure and maintain high standards of service delivery, safety, security, discipline and compliance with the organization’s policy.
• Ensure that the team adheres to the company's uniform and hygiene standards.
• Ensure that quality is maintained in all aspects of the work and as per the standards.
• Ensure to continuously delight the customers by offering trend setting and innovative products and services.
• Handle additional responsibilities as and when delegated by Management.

Hygiene / Personal safety / Environment:

• Ensures that the workplace and storage areas remain clean and tidy, and the safety of consumable goods by always respecting HACCP regulations
• Respects the instructions and safety guidelines for the equipment (s)he uses
• Applies the hotel's security regulations (in case of fire etc)
• Respects the hotel's commitments to the "Environment Charter" (saving energy, recycling, sorting waste etc) and meets Novotel' ISO 14001 environmental commitments as applicable to the role, if the hotel is involved in the programme.

Job Purpose

Reporting to the Director of Food & Beverage this position is responsible for the organisation, planning and directing of overall daily food & beverage operation and administration of the department and be responsible and accountable for its profitability and revenue generation.

Primary Responsibilities

• Ensure that new hire induction and required trainings are completed within three months of employment
• Provide training to team members and casual labour on all aspects of banquet operations according to the requirements in the department’s Standards
• Observe, coach, motivate and counsel team, disciplinary actions if required
• Respond to all questions raised by your team in the area of personnel management
