Indian Curry Chef/Cook, Tandoori Cook & Indian Cuisine Chef (sous) these full time permanent positions available at a Indian restaurant located Mackay QLD (LJ&VA Holdings Pty Ltd T/A Roshni Indian Restaurant – Roshni by Raj) Must have experience in Indian cuisine Visa sponsorship available for candidates with the right qualifications along with generous salary package $70,000-$75,000 depending on experience. Indian Curry Chef/Cook TASKS Have full operational knowledge of all recipes, standards, portion sizes & presentation style of dishes produced within the kitchen Assist in the creation of menus (taking into account food & labour costs) Discuss food preparation issues with manager & other staff & monitor preparation & presentation of dishes Work with management & set daily & weekly production levels for kitchen Maintain stock levels according to requirements of business & understand how this can have an effect on food costs Implement & ensure compliance w/ food hygiene standards & health & safety requirement Check freshness & quality of ingredients Ensure food prepared in kitchen is of highest possible standards Be responsible for the supervision & training of junior staff Deal with food complaints efficiently Demonstrate strong organisational skills Prepare curries, sauces & desserts as & when required Qualification Diploma Commercial Cookery or Hospitality+2yrs experience Tandoori Cook TASKS Operating traditional tandoor oven, cooking such items as meat & bread Preparing curry, sauce & dessert as per standard & style set by the Head Chef(s) Regulating temperatures of tandoor ovens grills burners pans & other cooking equipment Able to demonstrate a thorough understanding of traditional North Indian cuisine including desserts Storing food in temperature controlled facilities Ensure the correct preparation & presentation standard of the dishes is maintained at all times Demonstrating tandoor techniques & cooking procedures to other staff if required Checking on food supplies & advising the supervisor of any requirements Ensure all the equipment used in section is in good condition & hygienically cleaned before & after use Ability to demonstrate strong organisational skill Qualification Cert III in Commercial Cookery+ 2yrs experience.
