As an Executive Sous Chef, you’re not just assisting in the direction and administration of all hotel culinary operations – you’re spreading the light and warmth of hospitality by delivering memorable experiences that make the stay for every guest.

Here’s what you’ll do during a typical day:

• Ensure the correct preparation and presentation of a consistent level for all food items prepared.
• Ensure that sanitation standards as set forth by Hilton and local  regulations are in compliance as well as the cleanliness and organization of the kitchen. HACCP
• Plan and develop menus for the hotel considering factors such as product availability, service cost, marketing conditions, number to be served, etc. Established and maintains appropriate food portions with respect to the hotel’s pricing policy.
• Assign prices for food items on daily menus that results in net profit for the food cost area and participates in making decisions regarding printing, layouts, posting and distributing of menus.
• Prepare and post employee work schedules to reflect operating forecasts and to keep within budgeted figures. The ability to prepare a daily payroll report.
• Supervise all methods of food preparation and cooking methods, size of portions, garnishing and presentation of food.
• Coordinate and supervise the ordering of all food supplies and kitchen equipment; approve all products to meet quality standards; keep cost accounts; and takes responsibility of food preparation areas.
• Hire, trains, discipline, supervise and organize all kitchen personnel on a regular basis.
• Complete and provide performance evaluations for all kitchen employees making recommendations for salary increases as warranted.
• Hold regular meetings with the kitchen staff as well as attend and participate in all required meetings.
• Treat employees at every level of responsibilities fairly and consistently to achieve high morale and minimum turnover.
• Maintain a consistently high level of employee morale and motivation.
• Coordinate with the Food and Beverage Director, the Hotel Manager and the Director of Catering any special functions regarding food preparation and presentation, including additional costs and staffing requirements.
• Ensure that sanitation standards as set forth by Hilton and the state are in compliance as well the cleanliness and neatness of the kitchen. The ability to supervise the maintenance and cleanliness of all food preparation equipment.
• Develop and ensure a safe working environment for people to work.
• Set up control systems which will assure quality and portion consistency.
• Create proper purchasing specifications as stipulated in “Purchasing of Conduct”.
• Monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.
• Communicate with the Director of Food and Beverage on a regular basis the activities and result of the kitchen.
• Able to prepare relevant budgets for all the kitchens.
• Respond properly in any hotel emergency or safety procedures.
• Perform other tasks or projects assigned by hotel management and staff.
• Coordinate the job requirements between all the kitchens, the Chefs, in cooperation with Stewarding, Service and Engineering departments.

In addition, this role requires the following minimum qualifications:

• At least 6–8 years of professional kitchen experience, including supervisory experience as Sous Chef or Senior Sous Chef
• Ability to oversee kitchen operations and act in place of the Executive Chef when required
• Experience in kitchen administration, including menu planning, inventory management, cost control, scheduling, and operational coordination
• Strong knowledge of food preparation, production, and professional kitchen workflows
• Good understanding of food safety, hygiene standards, sanitation practices, and HACCP requirements
• Experience in leading, training, and coordinating kitchen staff
• Strong organisational and planning skills with the ability to manage kitchen systems and processes
• Good communication skills in English, both written and spoken
• Ability to work effectively in a fast-paced, high-volume kitchen environment

The ideal candidate will bring extensive, mastery-level expertise in traditional and modern Japanese gastronomy (including specialized Omakase and Kaiseki) to maintain our high standards of culinary excellence.

Key Responsibilities:

• Menu Architecture & Curation: Design, implement, and continuously elevate authentic Japanese seasonal menus, managing ingredient sourcing directly from elite Japanese vendors.

• Kitchen Operations Management: Oversee all daily kitchen workflows, maintain rigorous food health, safety, and hygiene standards, and strictly manage food costing and inventory budgets.

• Culinary Training & Knowledge Transfer: Actively mentor and upskill local kitchen staff, passing down advanced techniques in traditional fish aging, fermentation, and intricate preparation methodologies to build a resilient local team.

• Executive Leadership: Collaborate directly with management and directors regarding restaurant expansion, kitchen workflow layout optimization, and brand positioning in the premium F&B market.

Job Requirements

• Experience: Minimum of 15-20 years of professional experience strictly within high-end, premium Japanese culinary establishments or Michelin-starred concepts.

• Specialized Skills: Mastery of authentic Japanese culinary arts, including advanced sashimi presentation, traditional dashi blending, and deep knowledge of seasonal ingredient logistics.

• Leadership Profile: Proven track record of managing elite kitchen teams, organizing inventory workflows under high-pressure environments, and leading culinary training programs.

• Language/Cultural Fluency: Ability to communicate fluently with premium Japanese ingredient suppliers and understand traditional culinary philosophy is essential for menu authenticity.

This role will support the Chef De Cuisine in managing daily kitchen operations, supervising staff, and ensuring the highest standards of culinary excellence and hygiene.

What you will expect:

• Assist the Sous Chef and Head Chef in managing daily kitchen operations, running service smoothly, and stepping up to lead the kitchen in their absence
• Oversee the preparation, cooking, and presentation of all dishes, ensuring they consistently meet the restaurant's standards
• Coordinate and manage the mise en place process across various sections, optimizing kitchen efficiency and timely service
• Train and mentor junior staff, sharing knowledge and techniques to foster their development
• Assist with inventory management, stock rotation (FIFO), ordering, and minimizing food waste

Skills/Qualifications

• Proven experience as a Senior Chef de Partie or Junior Sous Chef

Job Summary

The primary role of the Commis Cook / Kitchen Assistant is to provide support to the Head and Sous Chef and any other persons or companies assigned, in a professional and timely manner. This individual will assist with daily kitchen operations and must be flexible in terms of job scope and work hours to meet the demands of our fast-paced and dynamic organization.

Key Responsibilities:

• Support the Head, Sous Chef and the team to ensure smooth daily operations.
• Prepare, arrange, and portion all food by using standard recipes and present instructions in accordance with the standards established.
• Full awareness of all menu items, recipes, methods of production and presentation standards
• Check and ensure adequate provision of ingredients, working equipment, inventory, and supplies, etc. for smooth daily operation of the restaurant.
• Ensure all food products are stored properly in their appropriate refrigerator, storage containers with proper handling and usage.
• Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout all kitchen areas.
• Ensure all equipment is being maintained and cleaned regularly.
• Assist in monthly inventory counts and proper recording of food wastage.
• Work closely and cooperate with other staffs to achieve highest possible satisfaction of food items.
• Any other duties as assigned

Requirements:

• Possess certificate in Culinary Skills / GCE 'O' level or equivalent
• Prior work experience would be an advantage
• Possess basic food and hygiene certificate is required
• Knowledge of various cooking methods, ingredients, equipment, preparation, and procedures
• Team player, preferable with good communication and interpersonal skills
• Positive service attitude, coachable, willingness to learn
• Working Location (1) Takashimaya or (2) Dhoby Ghaut area
