• Exceptional expertise in R&D and new product development, particularly with viennoiserie, sourdough, and laminated doughs.
• Demonstrable experience in menu engineering and a strong understanding of food cost and labour cost management.
• Experience in guiding or collaborating with central kitchen operations to ensure product scalability and consistency.
• Strong leadership and team management skills, with the ability to inspire and mentor a diverse team.
• A keen eye for detail, uncompromising commitment to quality, and a passion for culinary innovation.
