OMC Burgers & Bar is an Australian company located in Gregory Hills, Southwest Sydney established in 2014. They are a popular restaurant that are committed to serving customers only premium burgers and slow cooked/smoked meats made by professional chefs. They use the highest-grade 100% Australian beef (MSA 3 + Beef) that is minced daily to their specifications.
The Role
As a head chef, you will lead the kitchen function to achieve the highest standards of food production. Responsibility is for the creation and maintenance of a dynamic and customer- focused menu, performance driven quality culture with focus upon culinary excellence and cleanliness in the workplace.
You will work within an agreed budget and will have responsibility for the efficient running of the kitchen striving to improve quality standards, profitability, staff development and retention. The ability to demonstrate effective and co-operative team working with colleagues at all levels is also a prime requirement of the role.
This is for a full-time role with an annual salary of $75,000 plus superannuation.
Responsibilities
Plan, direct, and supervise the food preparation and cooking activities
Determine how food should be presented, and ensure consistent presentation look
Determine production schedules & staff requirements necessary to ensure delivery of services
Estimate amounts and costs of required supplies, such as food and ingredients
Inspect supplies, equipment, and work areas to ensure conformance to established standards
Instruct cooks and other workers in the preparation, cooking, garnishing & presentation of food
Monitor sanitation practices to ensure that employees follow standards and regulations
Order or requisition food and other supplies needed to ensure efficient operation
Analyse recipes to assign prices to menu items, based on food, labour, and overhead costs
Arrange for equipment purchases and repairs
Meet with sales representatives in order to negotiate prices and order supplies
Prepared and cook food of all types, either on a regular basis or for special guests or functions
Supervise and coordinate activities of cooks and workers engaged in food preparation
Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers
Check the quality of raw and cooked food products to ensure that standards are met
Check the quantity and quality of received products
Demonstrate new cooking techniques and equipment to staff
Record production and operational data on specified forms.
Requirements
Relevant qualifications in cookery, at least a Cert 3 in Commercial Cookery
Minimum 3 years of experience as a Chef
Experience and knowledge in modern Australian and Italian cuisine is essential.
Must be able to work with proteins like pork, beef and seafood.
Must know how to prepare meals to dietary requirements.
Experience in kitchen operations and in managing a team.
Australian citizens and permanent residents are preferred.
